Chicken breasts in Thai curry butter

Main course for 4 people

For 4 small terracotta bricks measuring 8 x 16 cm

1 stalk of lemongrass
2 kaffir lime leaves
75 g butter, softened
1 tsp red curry paste
1 tsp raw sugar
1 tbsp soy sauce
1 tsp lime juice
4 chicken breasts

Cilantro for garnish

PREPARATION

Remove the outer leaves from the lemongrass and finely chop the inner part. Finely chop the kaffir lime leaves. Beat the butter, curry paste, and raw sugar with a hand mixer until fluffy. Add the lemongrass, soy sauce, and lime juice and beat well again.

Preheat the gas grill to 250 °C. Place the chicken breasts in the molds and spread the butter on top. Sprinkle with kaffir lime. Cover with the lid and place on the grill. Bake the chicken breasts covered for approx. 20 minutes. Remove from the grill. Serve the chicken breasts with rice and vegetables, for example, and garnish with coriander.

Grilling time: approx. 20 minutes

Serve with fragrant rice and steamed vegetables.

Tip

Prepare the embers. Place the closed brick in the embers. Cover the brick with embers. Bake the chicken breasts in the embers for approx. 20 minutes. Check after approx. 15 minutes.
