
Serves 4
Pizza dough:
500 g semi-white flour
30 g fresh yeast
½ teaspoon salt
1½ - 2 dl lukewarm water (depending on the absorbency of the flour)
100 g flour for rolling out
Crumble the yeast and place in a small bowl with 1 dl lukewarm water. Add about 100 g flour and mix well. The result should be a soft dough. Add a little more flour if necessary. Leave to stand at room temperature for about 30 minutes.
Sift the remaining flour onto a board, sprinkle with salt, make a well and place the pre-dough in the centre. Work the flour into the dough and gradually add the lukewarm water. The result should be a firm but still soft dough. Continue kneading the dough on the floured board for 10 minutes, occasionally beating it onto the board until it becomes very elastic.
Divide the dough and sprinkle each piece with flour, place in a bowl, cover with a cloth and a wool blanket and leave to rise for 1 ½ - 2 hours. The dough should approx. double in size. If it rises too much too early, you can flatten it again with your hands and leave it to rise again.
Brush 2 large baking trays with oil.
Flatten each piece of dough with your hands into a round flatbread, then roll out lightly with a rolling pin on a floured board. Place the two pizzas on the baking trays. Spread the desired filling* over the dough.

Bake in a preheated oven at 300° for approx. 15–20 minutes.
Top the finished pizza with fresh basil leaves – and voilà, enjoy a delicious pizza.
